• Update examples to show correct format for ebs_config input

ℹ️ Note - the upstream provider is currently not functioning as intended for setting ebs_config on instance_type_configs or core_instance_group. I have tried adding a static ebs_config directly into the module source and these changes were not detected by Terraform at this time

Motivation and Context

• Resolves ebs_config could not take effect #19

This looks good. If necessary, it is pretty easy to make ebs_config support for both types (with one element) - list and map. We did it in another module.
