Figure and table changes for print version

First pass at figure and table changes for #213

Seeing these issues at the end, still to figure out.

Warning messages:
1: The label(s) tab:probability-args not found 
2: The label(s) ames-latitude-splines not found 
3: The label(s) other-steps not found 
4: The label(s) other-steps not found 

The animations are removed but only one has been fully replaced (the racing example).
