Upgrade values to try fix interpolation and gamut clipping

What

• I upgrade matrix to use the new one from: Update Oklab matrices for better 64 bit conversion color-js/color.js#357. Note that OkLab_LMSg is now [[1. x x] [1. x x] [1. x x]]

• i also use the new matrix in OkLab Gamut matrix: those number are implicitly LMS_lRGBand before this PR we had two different source so value was not homogene internally

• i recomputed the cutoff point to match new values

• and then i did the numerical fit again to get good polynomial interpolation. I decide to switch and use lmfit wich use https://en.wikipedia.org/wiki/Levenberg%E2%80%93Marquardt_algorithm

• as with two steps, the error was super low, i changed the halleys steps from 3 to 2

• i did some refacto

• and fixed tests
