Switch Node.js functionality to ESM.

To update to version 8.0.0 of gulp-imagemin, we must switch the node.js functionality to use ESM instead of commonjs.
I also believe this would be a good idea, as the community is slowly moving away from commonjs. For now I am going to
update gulp-imagemin to version 7.1.0.
