Move /docs to separate repository

This pull request removes the /docs directory from our current repository as it has been migrated to a new repository named tiptap-docs. This transition has been made to enhance the developer experience by allowing contributors to build and run the documentation website locally. Now, developers can view the changes live as they write, making the documentation process more intuitive and effective.

Please note:

• The content in the tiptap-docs repository remains under the same MIT license.
• All historical changes and contributions to the documentation can still be accessed through the commit history of this repository.
• Moving forward, any changes to the documentation should be committed to the tiptap-docs repository.
