fix: fix shiki setup

Changes Overview

This PR fixes an issue with Tiptap Demos not rendering correctly anymore.

Implementation Approach

I upgraded shiki and made sure to output our workers as ES modules.

Testing Done

I've build the demos locally and checked them out by serving the app via vite.
