Document new changes/additions in mediasoup v3 done within flatbuffers branch

• Document new TransportListenInfo in the website (PR [flatbuffers] Add ListenInfo in all transports and send/recv buffer size options mediasoup#1084).
• Document new rtcpListenInfo in PlainTransportOptions once PR PlainTransportOptions: add optional rtcpListenInfo mediasoup#1099 is merged here.
• Document the new pause/resume feature in DataProducer and DataConsumer (PR [flatbuffers] Add pause() and resume() in DataProducer and DataConsumer mediasoup#1104):
  • pause()and resume() in DataProducer and DataConsumer.
  • paused getter in DataProducer and DataConsumer.
  • dataproducerpause and dataproducerresume events in DataConsumer.
  • pause and resume events in DataProducer.observer and DataConsumer.observer.
  • paused?: boolean in transport.consumeData() and transport.produceData().
• Document the new subchannels stuff (PR DataChannel subchannels mediasoup#1152).

It looks like a lot of changes... Will there be documentation of the in-wire serialized format fields?

What is in-wire serialization format? You mean flatbuffer message formats? If so those are in worker/fbs folder and we won't document them anywhere else because the my are private types between Node/Rust and worker.

Yes, I was talking about that. I know it's an implementation detail, was curious to know how they were.

@jmillan this is ready, so once we merge flatbuffers in v3 and release a new version. we must merge this PR and re-publish the website.
