Changes

Create new LocalStack fixture GetLocalStack for AWS tests
Support using LS pro image when testing
Use new fixture in tests
Refactor ElasticSearch ouput to more simply sign requests when sending to AWS
Refactor ElasticSearch test to correct use LS

Note: This approach will need a re-work if we want to include Snowflake testing with LS (available in the pro version which the CI has access to).
