We need to convert WireMock to the official DockerHub organization

• - Setup https://hub.docker.com/orgs/wiremock after conversion from the private account
• - Document the organization on community resources
• - Apply for FOSS sponsorship
• - Adapt https://github.com/wiremock/wiremock-docker
