According to https://wiki.php.net/todo/php81 it coming in November would be great to provide a new image to test compatibility

As I see in Alpinelinux mostly all PECL extensions works with 8.1 (except ones which still not ported to 8.0 #129 )

I've added 8.1 tag (only -dev and -dev-macos for now). List of incompatible pecl modules listed here #159
