CentOS 7 does not go EOL until June 2024, however, to avoid spending any more valuable human resources on this, then we will pull the plug early. Signed-off-by: Simon A. F. Lund <simon.lund@samsung.com>
Python 3.7 is EOL, thus bumping the source-installation to the currently oldest, but not yet EOL version of Python (Python 3.8). Python 3.7 is still tested on the distributions shipping it as the latest version of Python. Signed-off-by: Simon A. F. Lund <simon.lund@samsung.com>

This is a bump of deps. and distros. going EOL. Also, and most notably, pulling the plug on CentOS 7.
We have provided alternatives in the form of CentOS Steam 8 + 9, plus OpenSUSE and Fedora. Thus, plenty of viable alternatives to one harder to support distributions. Thus, dropping 10 months before it is going EOL.
It might make sense to add additional alternatives, made a note of this in #331
