v3.7-branch: manifest: update percepio

Describe the bug
The module doesn't compile when certain options are enabled. This has been fixed in main branch and needs to be backported.

To Reproduce
Enable syscall extensions or Ringbuffer.

Expected behavior
Working syscall extension and RingBuffer.

Impact
Prevents users from using syscall extensions and RingBuffer mode.
