We should remove the sample.{dbt_project,profiles,schema}.yml files from the dbt repo, and instead represent them in the docs site. They should be super obvious and easy to find, and we should link to them inside of the repo readme.

Separately, the dbt repo readme could probably use some love. This might be a good opportunity to touch it up!
