**Motivation** To not use our hive fork anymore **Description** With this ethereum/hive#1354 we can pin the https://github.com/ethereum/execution-apis.git version, and we will pin it to a commit that contains a post-merge commit

Allow to customize the git ref that is used to download
execution-apis.This is using the same approach as: https://github.com/ethereum/hive/blob/master/simulators/ethereum/eest/consume-engine/Dockerfile
Why do I need this? I need to pin to an older version that uses a post-merge genesis file, the commit previous to ethereum/execution-apis#627
