feat: Improve tool.pixi.project detection logic (#1127)

@tdejager , as discussed, an improved detection of pixi project table in
`pyproject.toml `, encapsulating all non-pixi `pyproject.toml` logic
used during `init` into a struct.

plus minor cleanup (e.g. typo)
