chore: use rolldown to bundle Vite itself

Description

pnpm dev / pnpm build now both uses rolldown!

• e41f48d: fixed this long standing problem with our bundle script (fix: remove buildTimeImportMetaUrl #8785 (comment))
• 6241902: swapped rollup + plugins with rolldown
• 9df3888: added filters where applicable
• 1a2cac8: replaced the pnpm dev script that was using esbuild with rolldown
• 6ed51c1: lowered the bundle size limit as rolldown outputs a smaller bundle due to not adding blocks {} in some places

This PR is now ready except for the fact that it's using a canary release. I'll mark this PR as "ready for review" when the next beta is out.
