rio-tiler 7.9.x breaks titiler-multidim tiles endpoint

See #96 and #101 for more discussions. I am not sure what broke but I needed to pin an older version to make those PRs work.

🤔 not much have changed between 7.8.1 and 7.9.0 cogeotiff/rio-tiler@7.8.1...7.9.0

we changed the internal of the XarrayReader.part method but this shouldn't break anything 😬

ok so this is the issue reported in #96 (comment)

the tile endpoint returns {"detail":"Bounds and transform are inconsistent"}

the error comes from https://github.com/cogeotiff/rio-tiler/blob/dd8fbc7db4745ae6e19a6a297ab1d55542577fd3/rio_tiler/io/xarray.py#L370-L400 I guess this is because the dataset use top left as origin (not bottom left as raster)

I'll push a fix in rio-tiler 🙏
