feat: New data category for indexed transactions [INGEST-1535] #1535

Add a new data category for indexed transactions, that is, transactions that are stored.

This implements Option 2 of the Dynamic Sampling Packaging V3 DACI.

The mapping from old to new looks as follows:

  • transaction -> transaction_indexed
  • transaction_processed -> transaction
