Release 5.1.0 before going 6.0.0?

Since release 5.0.0 I believe we have merged the following pull requests to master:

• Use ruff for linting (instead of current flake8/isort/pyflakes) #727
• Enable rule B (flake8-bugbear) on ruff #729
• Configure read the docs V2 #732
• Fix typo in docs #735
• Make json.loads of Python >=3.6 decode bytes by itself #738
• Fix body matcher for chunked requests (fixes #734) #739
• Fix query param filter for aiohttp (fixes #517) #740
• Remove unnecessary dependency on six. #743
• build(deps): update sphinx requirement from <7 to <8 #745
• Add action to validate docs #746
• Add editorconfig file #747
• Drop iscoroutinefunction fallback function for unsupported python #748

I believe it would be nice to have one last 5.x.x release 5.1.0 with these changes before going 6.x.x.

@kevin1024 would you be up for cutting a release 5.1.0 from latest master shortly?
(Latest commit is e7c00a4 as of the moment.)
